The general idea behind smoothie bowls is to make a slightly thicker, more nutrient dense smoothie (with things like nut butters and/or avocado), top it with a range of delicious extras (and decorating food with toppings is always fun, right?!) and then tuck in with a spoon!
This delicious and filling smoothie bowl is packed full of green goodness (from the spinach, kiwi fruit and avocado) and a super nutritious way to start the day. You can go nuts with whatever toppings take your fancy!
2 kiwi fruits, skin removed
2 cups chopped and frozen banana
2 cups baby spinach leaves
½ cup mint leaves
¼ of an avocado
1 tbsp rice malt syrup (or honey/maple syrup)
1/3 cup coconut milk (or other milk of your choice)
6 ice cubes
Topping suggestions: extra kiwi fruit slices, berries, green apple, coconut, granola, fresh mint. The possibilities are endless!
Blend all ingredients together in a high powered blender until smooth and creamy. Pour into a bowl and top with whatever toppings take your fancy! I love granola for crunch and extra fruit!
