You might think that beetroot is a strange smoothie ingredient but I'm hoping you’ll change your mind after you try it in this smoothie! The slight earthiness of the beets blends perfectly with the sweet tartness of the berries. Both beets and berries are full of vitamins and minerals and packed with powerful antioxidants - coupled together here this smoothie packs a nutritious punch!
1 medium beetroot (skin removed) steamed, roasted, or raw (if you don’t have a high speed blender, use steamed or roasted) 1.5 cups fresh or frozen mixed berries 3/4 cup almond milk
6 ice cubes
Optional: 1-2 tsp of rice malt syrup/honey/maple syrup if you like things a bit sweeter. I find this smoothie to be sweet enough without added sweetener.
Blend all ingredients together in a high powered blender until smooth. Enjoy!
