I created this recipe in an attempt to replicate a delicious smoothie of the same name that I enjoyed at the Noosa Farmer's Markets a couple of years ago. I think I've gone pretty close to recreating the delicious balance of creaminess (from the bananas and almond butter), sweetness (from the dates and the banana) and the freshness of the mint. This smoothie has to be super cold so make sure you don't skimp on the ice cubes!


1.5 cups chopped and frozen banana (approx. 2 medium sized bananas)

2 packed cups of baby spinach leaves or chopped spinach

2 cups of fresh mint leaves

2 Tbsp almond butter*

4 medjool dates, pitted

1 cup water

2 trays of ice cubes (I like this smoothie to be really cold!)

2 Tbsp cacao nibs (optional)


Blend all ingredients (except for the cacao nibs, if you are using them) together in a high powered blender until smooth. If you are using cacao nibs, add them to the blender once all other ingredients have been blended and quickly pulse blend them for a couple of seconds so they break down a little bit but you still get that little hint of chocolate texture through your smoothie. Pour into 2 glasses. You can serve with a few extra cacao nibs on top if you like!


*You can buy almond butter from most supermarkets and health food stores but it's easy to make your own. You can find my recipe here
