In the middle of a hot Brisbane summer smoothie bowls are such a wonderful, refreshing and nutritious breakast to start the day with. You get all the benefits of a regular smoothie with the added bonus that you get to top them with lots of yummy things like granola and extra fruit and tuck in with a spoon! The end result is like a tropical flavoured soft serve so you feel like you're eating dessert for breakfast whilst fuelling your body with lots of goodness.
If you have kids that are resistant to smoothies- try serving them up this way as thicker, smoothie "bowls" that they can eat with a spoon. I tell the kids they are having banana and mango "ice cream" for breakfast (with some spinach blended in to make their brains and muscles grow and to help them run faster and swim faster in the pool) and they line up! They get to "decorate" their bowls themselves with the granola and fruit.
I've added in some avocado (which you can't taste) which gives the smoothie added creaminess and a boost of healthy fats and some lime to give it a bit of freshness and zing.
Make sure you peel, chop and freeze your banana and mango the night before you want to enjoy these smoothies!
Ingredients 1 large mango, peeled, chopped and frozen (about 2½ cups)
2 large bananas, peeled, chopped and frozen (about 2-2½ cups)
¼ of an avocado
2 firmly packed cups of baby spinach leaves
The flesh of half a lime
⅓ cup water
For the toppings: It's up to you! I used granola and banana, pomegranate, raspberries, passionfruit, nectarine and extra mango but you can use any fruit you like.
1. In a high powered blender or food processor add the water, lime, avocado and baby spinach leaves followed by the chopped frozen banana and mango.
2. Blend until smooth and creamy. The consistency that you are after is that of a thick soft serve. Add a tiny bit more water if necessary to achieve that consistency.
3. Divide into 3 or 4 bowls, top with your granola and any extra fruit and dive in! Enjoy!
