This is a quick and easy nut free crunchy snack made up of ingredients that I always have in the pantry and fridge. I made this recently for a bunch of mums at a healthy lunchbox presentation and everyone loved it and asked for the recipe so here it is! So simple it barely requires a recipe ! I've used coconut flakes, pepitas and sunflower seeds but you can create your own trail mix adventure by adding some dried fruit (make sure it's preservative free - I buy all my dried fruit from health food stores), and you could use additional or alternative spices such as ground ginger or nutmeg if you like.
1½ cups coconut flakes
1½ cups seeds (I used a combination of sunflower seeds and pepitas/pumpkin seeds)
2 tsp ground cinnamon
2 tsp coconut oil
1.5 Tbsp 100% pure maple syrup (make sure you buy pure maple syrup not the "maple flavoured syrup" which contains added refined sugar and artificial flavours) or alternatively you could use honey or rice malt syrup
Preheat oven to 170C and line a large baking tray with baking paper.
In a large mixing bowl combine the coconut flakes with the seeds.
In a separate bowl mix the Add the coconut oil, cinnamon and maple syrup and mix well to make sure the seeds and flakes are well coated. Have a taste and add more cinnamon or maple syrup if necessary, to suit your tastes.
Spread the mixture out evenly over the lined baking tray and bake for about 15 minutes or until golden and crispy. Allow to cool and then store in a sealed container in the fridge.
