9 times out of 1o when I am making a smoothie for the kids or myself I like to add in some veggies for some extra nutrition. The flavour of zucchini and baby spinach in this one are very well disguised behind the pink colour and predominant flavour of the strawberries and the kids loved it! The chia seeds provide a boost of iron, protein, calcium, magnesium and omega-3s.
And a couple of tips for you:
1. When you are adding chia seeds to smoothies you need to drink them straight away. If you leave the smoothies stored in the fridge the chia seeds will expand and change the consistency of the smoothie.
2. When shopping at your local fruit shop/grocery store always check out the discounted/imperfect fruit and veg section. I picked up 3kgs of perfectly good ripe strawberries for $7.50 at my local deli/food store recently - perfect for freezing for smoothies.
2.5 cups frozen strawberries
1 small zucchini, sliced (and you can peel as well if you want to)
A small handful of baby spinach leaves
1.5 cups milk of choice (I used coconut milk)
1 Tbsp chia seeds
1-2 tsp honey or rice malt syrup (optional)
Place all ingredients in a high powered blender and blend until smooth and creamy. This makes 1 large serve or 3 small kid-sized serves.
