Fennel, grapefruit & dill salad
This salad is a classic example of only a handful of fresh ingredients coming together to create something tasty and beautiful.
The aniseed flavours of the fennel and dill are offset by the deliciously sweet and sour red grapefruit. Avocado brings some creamy goodness to the party. With this kind of salad where the ingredients are so fresh and delicate only a light and simple dressing is needed.
This salad presents beautifully and is perfect when entertaining guests.
1 bulb of fennel (trimmed and fronds removed) finely shaved using a mandolin or sharp knife
2 ruby red grapefruits, peeled and sliced into segments
5 or 6 radishes, finely shaved using a mandolin or a sharp knife
1 large avocado, sliced into segments
3 Tbsp roughly chopped dill
Extra virgin olive oil and a squeeze of lemon to drizzle on top (or you could use lemon-infused olive oil)
Sea salt & pepper
Arrange all salad ingredients on a large serving platter/plate. To dress it, simply drizzle a little freshly squeezed lemon juice and good quality extra virgin olive oil on top. Finish with a generous amount of freshly cracked pepper and a sprinkle of sea salt.
