Chocolate and cherries - a match made in heaven. For those of you that used to love the ol' Cherry Ripe bar - this recipe is for you. A perfect wholesome treat for the festive season (dairy, gluten and refined sugar free). Hubby and I fought over the last slice when I last made this...not joking.
Keep this slice stored in the freezer and whip it out when you want to impress your guests or simply indulge in a little bite sized choc/cherry yumminess yourself.
1 cup almonds
¼ cup desiccated coconut
1/3 cup medjool dates, pitted
2 Tbsp raw cacao powder
1 cup raw cashews
1¾ cup desiccated coconut
2 cups frozen pitted cherries
3 Tbsp rice malt syrup or honey
¼ tsp sea salt
1 tsp vanilla extract
Top chocolate layer
1/3 cup coconut oil, melted
¼ cup raw cacao powder
¼ cup pure maple syrup
Line a 34cm x 21cm bake tray with baking paper.
Add the almonds to a food processor and blend for a few seconds until they are blitzed into a fine crumb. Add the remaining ingredients and blend until the mixture comes together. Press the mixture into your lined tray with your fingers, and use the back of a wet dessert spoon to smooth it out. Place in the freezer while you make the filling.
Blend the raw cashews and desiccated coconut in your food processor for 1-2 minutes. Add the remaining ingredients and blend again for 2-3 minutes, until well combined, stopping to scrape down the edges as required. Spread on top of the base. I use the back of a wet dessert spoon to smooth it out. Place back into the freezer while you make the chocolate layer.
Top chocolate layer
Add the 3 ingredients to a small mixing bowl and whisk until well combined and there are no lumps. Pour the chocolate on top of the filling. Place back into the freezer for at least an hour or preferably overnight. Cut the slice with a hot knife into your desired portion sizes then keep stored in the freezer.
You can eat this slice straight from the freezer. There is no thawing required.
As this is a raw dessert you don’t want to leave this out on the table for too long or it will start to melt and not look too flash!
