As part of my collaboration with Divine FruitsI'm sharing my recipe for these delicious peachy popsicles. I highly recommend you have these stashed in your freezer this summer! They are the perfect antidote to a scorching hot Aussie summer day. The peaches featured in this recipe are from the Traprock region Stanthorpe and they are so lovely and sweet. 670g of fresh peaches (approximately 4 large sized or 8 small sized peaches)
½ cup unsweetened coconut yoghurt
½ tsp vanilla extract or vanilla bean paste
1-2 Tbsp rice malt syrup or honey (depending on how much added sweetness you want)
1. As an optional first step – slice a few fine slices of peaches and set them aside. You can use these to place in your popsicle moulds which will make them look extra pretty!
2. Remove the pits from all of the peaches and place all the flesh (including the skin) into your blender along with the rest of the ingredients.
3. Blend until combined.
4. Place the reserved peach slices into a few of the moulds then carefully pour the blended mixture into each of the popsicle moulds.
This made 8-9 popsicles for me but it will obviously depend upon the size of the popsicle moulds that you use.
